Make sure you always read ahead on the plan, because sometimes you have to make some things the day before! Today’s breakfast was overnight oats – oats soaked in almond milk overnight, topped with flaxseed and fruit. With a banana on top, this was 325 calories.

Day 12 began with a big serving of Extra C Juice, packed with orange, carrots, celery, lemon and ginger. It was thick and a little bit bitter thanks to the celery and ginger, but I really enjoy starting the day with so many fruit and veg! Two huge glasses came in at 163 calories.

If you’re like me, you probably had a cheeky flick through the book to find out some of the highlights of the diet, and found today’s recipe for French toast – and then got pretty excited. I’m not ashamed to say I’ve been looking forward to this for quite a while, and after a bit of trial and error, I have to say I really enjoyed it!

Day ten began with a glass of All You Need Is a Cape Juice – with a really involved list of ingredients! Good job it was Sunday morning so I had plenty of time to prepare everything! You need spinach, kale, cucumber, lemon, ginger, fresh turmeric, parsley, carrots and a Granny Smith apple. I was going to sub dried turmeric for the raw in this recipe as suggested in the book, but luckily I stumbled across some in Rice Up Wholefoods while I was stocking up!

So, as I mentioned in yesterday’s post, I prepared some granola yesterday, which involves a fairly simple process of combining oats with maple syrup, nuts, and sea salt, and baking them until golden brown. You’re supposed to mix these with sunflower seeds and cashews as well as almonds, but I only had flaked almonds, so I used those. The calorie count for a quarter of this mixture is 291.

Day eight started with a glass of Immunity Juice, a blend of pears, apple and blueberries. I couldn’t get the specific types of fruit required so I made do with plain old Conference pears and Jazz apples. Tasty! Calories: 216. Continue reading

Day four should begin with some chia pudding, but I enjoyed yesterday’s almond spread on toast so much I had it again today! 298 calories, served with the blueberries, but not the banana.

As much as I’m enjoying this diet, I had a bit of homesickness for ‘regular’ food, so I was really glad to see toast and sandwiches on the menu for today. It’s the same as going on holiday and trying new things – somehow even though the new stuff is great, you just have a yearning for something familiar.

So, breakfast was vegan, gluten free bread spread with almond butter, served with blueberries and bananas. My bread slices were super tiny and I cut my banana in half (what to do with that extra banana? Cut it into slices and freeze it! Add it to smoothies and juices or blend it for ‘nicecream’). So, my calories for this breakfast was lower than it probably should have been, at just 361.

I really liked today’s Quinoa Porridge, although I halved the recipe. It’s a simple mix of quinoa, almond milk, vanilla extract and cinnamon, topped with maple syrup and flaxseed. Even halved, it came to 411 calories – so you can see why I didn’t make the full batch!
