Apologies for the lateness of my post – I did finish the challenge as scheduled last week, during a very hectic deadline, so I’ve only just managed to get the time to post about the final two days. If you want to find out where the journey started head to day zero here!

Day 21 started with my first solid breakfast for a while! Avocado bruschetta – delicious! Eating something with a vinegar dressing early in the morning was a bit weird, but I still enjoyed it. Maybe avocado on toast would have been a gentler wake up! Calorie count was 285.
Lunch was another old favourite – walnut tacos. The recipe encourages you to experiment with other kinds of nuts, but I love the walnut version so much I wanted to stick with it! I only use 50g of walnuts per person for this, so the calorie count is 488. I can’t rave enough about this recipe – it would make an awesome party dish if you served it in small lettuce cups!
Dinner was another repeat – kale, cranberry and sweet potato salad. I halved the dressing as it was too strong for me last time, and it was much tastier this time around! Again, this is a single person recipe, but this time I reduced the amount of sunflower seeds and cranberries. That made it just 306 calories! I cut back a bit because I also scoffed a Sharon fruit and a spoon of peanut butter! Total calories for the day: 1365!
So – final day tomorrow. I am pretty excited to be finishing this challenge – it’s not always been easy, but it’s been well worth it! I’ll also reveal my weight loss total for these 22 days, and post a few more of my thoughts on the diet as a whole…
